Broccoli Browns – Andy Boy

Want a healthier breakfast but don’t want to sacrifice your hash browns?
- Start with one bunch of Andy Boy’s Broccoli.
- Rinse the Broccoli under cold water and blanch in boiling water for 5 minutes. Plunge the entire broccoli in a bowl of ice water. Drain the broccoli and pat dry with a clean towel. Cut the broccoli stalk from the broccoli crowns and grate the stalks, chop the broccoli crowns and set aside.
- Grate 2 large cooked and cooled baking potatoes.
- Mix the grated broccoli stalks with the grated potato and form into 4 hash brown patties.
- Spray large sauté pan with cooking spray and on medium high heat add broccoli browns, season with your favorite herb seasonings.
- Cook broccoli browns until golden brown and crispy, carefully flip broccoli browns over and continue to cook until crispy.
- While Andy Boy’s Broccoli Browns are cooking add chopped broccoli crowns and ½ cup of your favorite salsa to eight beaten eggs.
- Spray large sauté pan with cooking spray and add egg broccoli mixture to hot pan. Stir eggs over medium heat and season, cook until eggs are set.
- Serve Andy Boy’s Broccoli Eggs with Andy Boy’s Broccoli Browns!
