Ocean Mist Farms “Campfire Artichokes”

A perfect appetizer around the campfire or backyard grill!

4 Ocean Mist jumbo artichokes
Non-fat Cooking Spray (butter flavored)
4 tablespoons mesquite barbecue seasoning (dry) or taco seasoning (dry)
2 teaspoons garlic salt with parsley

 

Serves 4

  1. Rinse Artichokes.  Trim off top quarter of each artichoke and half of the stem.  With shears, snip off remaining petal thorns.
  2. Stand artichokes in a deep pot.  Add about 3 inches of water.  Bring to a boil, cover, reduce heat, and simmer until bottoms of stems are completely soft, about 40 minutes.
  3. Cooled, cooked artichokes can be stored in zip lock bags in the refrigerator until ready to grill.
  4. Once campfire or backyard grill is very hot, remove artichokes from the storage bag and gently open the leaves of the artichoke.  Generously spray artichoke with nonfat cooking spray making sure spray gets between leaves. 
  5.  Generously dust each artichoke with 1 tablespoon of mesquite seasoning followed by ½ teaspoon of garlic salt.
  6. Place artichokes on grill of campfire or backyard grill and turn frequently until outside leaves are evenly charred (about 20 minutes).
  7. No need for any dipping sauces with these artichokes since they have a wonderful smoky flavor.
